YUM!

Today was a looong day at work.  So it was especially nice to come home to leftover casserole that my MIL brought over.  I really wasn't planning to eat any, but I wanted to try just a little bite.  Mmm...yeah, I ate a whole bowl and am seriously trying to restrain myself from having another.  It was that good.  Here's the recipe that she left for me.  It's going to have to go into our rotation.

Sour Cream Noodle Bake

1 1/2 pounds ground turkey
1 tbsp oil/fat
1 tsp salt
1/4 tsp pepper
1/4 tsp garlic salt
1/2 cup chopped onion
1 cup tomato sauce or puree
1 cup sour cream
1 cup cottage cheese
1 pkg medium wide noodles (10 to 12 oz.), cooked & drained
1 cup sharp cheddar cheese, grated

1.  Brown meat in oil, add salt, pepper, garlic salt, onion & tomato sauce.  Simmer 10 minutes.

2.  Combine sour cream, cottage cheese & noodles.  Mix well.

3.  Put meat, sauce & noodles in casserole in alternate layers, top with grated cheese.

4.  Bake at 350 degrees for 25 to 30 minutes.

She made a few substitutions, instead of ground turkey she used shredded turkey.  I think you could easily substitute chicken, but I also think a version with ground turkey/beef would be yummy too.  I'm thinking it would be super easy if you bought a rotisserie chicken at the store and shredded it.  She also used lasagna noodles (if I were making the recipe without having seen hers, I probably would have thought it meant egg noodles or whatever), but I think any kind of noodle would work well here.
